For 2: Roasted Tomato Crostini

I LOVE to share a Friday afternoon cocktail with my hubby, and it’s even better with a snack.  Last Friday, we kicked off the weekend with a delicious roasted tomato crostini.  It was so easy to make and would be just as easy to put together for 20 as it was for 2.  The roasted tomatoes have an intense savory flavor and the mozzarella is so creamy when heated through, it’s the perfect combination on crusty bread.  I loved it so much we had it again the next day.  Just a few ingredients and super delicious, what more can you ask for?  You have to try this at your next happy hour, or cocktail party, or just because tomorrow is Friday!  Open a bottle of wine and get the weekend started – oh tomorrow you can’t come soon enough…

Roasted Tomato Crostini
1 tomato
6 slices of crusty bread
6 slices of fresh mozzarella
5-8 basil leaves
1 clove of garlic
Extra Virgin Olive Oil
Balsamic Vinegar

Preheat oven to 425.  Slice the tomato into 6 slices and arrange on a foil lined baking sheet, season liberally with salt and pepper.  Bake tomatoes for about 10 minutes, until they just begin to wrinkle.  In the mean time slice your bread, when the tomatoes come out of the oven put the bread in and toast until just golden brown.  Cut the garlic clove in half and rub over the hot toasted bread as soon as it is out of the oven and then top with a mozzarella slice, drizzle balsamic vinegar over the cheese and then put a tomato slice on top.  Put back in the oven for about 5-7 minutes to allow the cheese to warm through.  Top with fresh chopped basil and a drop or two of good extra virgin olive oil and serve immediately!
