For 2: Cream Cheese Stuffed Chicken

I thought about not posting this because it seems like so many blogs are posting "tired of your boring chicken" recipes, but this was a big hit at our house so here you go and sorry to jump on the bandwagon.  This chicken is fast and easy to put together so it is great for a week night.  If the thought of cream cheese in chicken makes you think this is going to be terribly unhealthy, substitute the fat free kind in and serve it with some sauteed spinach.  The nutrients in the spinach cancel out the fat in the cream cheese, right?
Sincerely Loving Food,
Cream Cheese Stuffed Chicken
3 tblsp Cream Cheese
1/2 small onion, minced
1tsp Worcestershire Sauce
2 chicken breasts
salt, pepper, olive oil, kitchen twine or toothpicks

Butterfly your chicken breasts or pound them so you have a large round flat surface of chicken. Mix cream cheese, onion and Worcestershire sauce together in a small bowl.  Season chicken with salt and pepper, then place half of the cream cheese mixture down one side, roll it up like a burrito and tie it shut with kitchen twine or seal with toothpicks repeat with the other breast, then season outside with salt and pepper.  Heat olive oil over medium high heat and cook chicken for about 5 minutes on all sides, watch for a nice golden color.  Let chicken cool for 5 minutes before removing twine or toothpicks.  Perfect served with spinach and rice.

  1. we made a variation of this the other night... it was SO yummy! the cream cheese kept the chicken nice and moist :) I used a little extra of the cream cheese mixture to melt on my baked potato the next night. yum :)

  2. i have one on my pinterest page that was a sour cream chicken that was amazing. highly recommend. i’m always looking for ways to change it up. thanks for this one!
