For 2: Beef and Bok Choy

If I had to pick one ethnic cuisine to eat for the rest of my life, hands down, without a doubt it would be Chinese food.  I would even eat Chinese food on Christmas if it was allowed, HA - remember that scene in A Christmas Story where the turkey burns and then family ends up at the Chinese restaurant and the wait staff sings FARARARA so funny linked here  if you don't know what I'm talking about go watch.  Anyway...back to the point I like to attempt to make some Chinese, at least inspired, food at home every now and then.  Granted I don't go the whole 9 yards with wonton soup and egg rolls, that would be tots awesome, but it still fills the void of my craving for a little while.  This beef and bok choy dinner came together very quickly, was incredibly flavorful and seems to be healthier than my take out house fried rice.  Recipe after the jump.

Beef and Bok Choy
for the steak:
2 rib eyes or filets or 1 flank steak (however much meat you want will work)
3/4 C soy sauce
1/4 C brown sugar
1 tablespoon red pepper flakes
1 tablespoon garlic powder

for the bok choy:
1 tblsp lime infused olive oil (or 1 tblsp olive oil and 1 tsp lime juice)
1 tblsp sesame oil
2 cloves garlic, minced
2 tsps sugar
1 tsp red pepper flakes (optional)
2 tblsp soy cause
1 bunch bok choy, sliced lengthwise, disregard end

1 inch piece fresh ginger root, minced

1 small bunch green onions, sliced
1 tblsp sesame seeds (optional)



Mix all the marinade ingredients together.  Pour over steak in a ziploc bag or seal-able container and marinate in the fridge for 4-5 hours.  Heat a skillet over medium-high heat - once hot sear the steaks on each side 3-4 minutes for medium, or cook to your desired doneness.  Cover with foil and set aside.  In the same skillet heat the olive oil and and sesame oil over medium, add the garlic and cook for one minute, add the soy, sugar, red pepper and ginger.  Cook for another minute and add the bok choy and turn constantly with tongs until just wilted, about 3 minutes.  Separate into two bowls, slice steak and place on top of bok choy.  Sprinkle with green onions and sesame seeds (if using).  enjoy!

  2. sounds good! i will definitely have to try. and yes, LOVE that movie. Roger has never seen it all the way through. Told him that was a sin. :)
