Chopped Challenge #1

The hubs and I enjoy watching the show Chopped on Foodnetwork, where the contestants get a basket of 3 ingredients that they have to use in creating a dish.  So we came up with the idea of a Chopped Challenge for dinner.  So he went to the grocery the other morning and when I got home I had this, each of which I had to include in our dinner that evening
A large MahiMahi filet, a head of radicchio and 2 packages of crackers (from which I could choose one), oh and my lovely assistant Ralph


I started thinking...first I went with the hardest - the crackers.  I thought I could pound them up and then use them as a crispy topping on the fish.  After looking in my pantry I decided to go with an Asian theme so I mixed some soy sauce, rice wine vinegar, grated ginger and garlic power and then poured it in a ziplock bag with the fish so it could marinate for a little bit (stuck it in the fridge).  With the radicchio I was leaning towards a slaw and I had a red bell pepper and some onion so I sliced those 3 things pretty thin and then made a dressing with teriyaki sauce, dijon mustard, toasted sesame oil, a little lime olive oil and some ginger.  I poured that over the slaw and let it sit in the fridge for a while.  Then I pulled the fish out set it on the broiler pan and covered it with cracker crumbs (these were black pepper crackers) and sesame seeds.

I drizzled a little olive oil on top of the crumbs so they would brown nicely and roasted the fish at 425 for about 12 minutes.  And here is the finished product all plated up, with a few sesame seeds sprinkled on the top to make it look pretty
 The hubs said the fish was great and the slaw was good; I call "good" raw veggies a success!  We thought this was a fun way to change up a week night dinner and hope to do it at least once a month.  I will be sure to let you know the next time we do!

  5. Good job! The raddichio would have thrown me off, I'm not a huge fan of that stuff! I can't wait until you guys do this again!
