My New Love: Zucchini Fritters!

The healthy side of me loves zucchini, and I think I have mentioned my obsession with fried stuff before…a joining of the two, equals my new obsession: Zucchini Fritters! These little guys are easy to make, using only a few ingredients, and taste…um…how do I saw…amazing, especially with a little spicy ranch for dipping. They are a great side dish or appetizer, and really it doesn’t have to be zucchini, you can do this with any type of squash or corn kernels or anything really. Zucchini Fritters
2 Zucchini
¼ C All purpose Flour
1 Egg
1 C (appx) Frying Oil: canola, vegetable, peanut…
Spicy Ranch for dipping (recipe below)

In a medium cast iron skillet or sauté pan, heat about ½ an inch of oil to about 350 degrees. Grate the zucchini and place in a bowl. I use the food processor with the grating attachment, but a box grater will work just fine. Mix the flour and egg in with the zucchini and season with salt and pepper. Test the oil with the end of a wooden spoon – when the spoon is placed in the oil little bubble should come up, if they do they oil is ready. Drop a tablespoon of the zucchini mixture in at a time, about 5 or 6 should fit in an eight inch pan, do not over crowd. Fry for 3 minutes, flip them over and lightly press down to flatten them out, fry for 2 to 3 more minutes and place on a paper towel lined plate to drain and season with a little pinch of salt. Fry remaining zucchini in batches until all is used.

Spicy Ranch
Mix ranch dressing and favorite hot sauce to taste – couldn’t be easier or better!
